When I do the food shopping I never know which potatoes are the best to use for what dish. I just look at the best potatoes around and I buy them. I never knew there were particular types of potatoes which are best for roasting and others which are best for mash. It wasn’t until Gary Mehigan mentioned it while making a potato gnocchi dish that I started thinking about it.
To the interwebs I went to look at the different types of WA potatoes available and which potato to use and here’s a great chart.
Armed with my new potato knowledge, I can’t wait to try that potato gnocchi recipe … mmmmmm

I really want to try the one that’s purple all the way through, but we’ve never seen it in the shops, only on TV. Always end up getting one that’s purple on the outside, using the lazy logic that colourful vegies might be healthier in some small way
